Gulguk (Clear Oyster Soup)





Gulguk is a clear soup with a fresh smell of the ocean. It's a simple comfort food. I added canari aekjeot (sand lance sauce), a favorite condiment for kimchi, in this recipe. If you put bab (cooked rice) in the soup, it becomes gulgukbab (soup with rice), a popular ordinary food.

Ingredients
Serves 1

50ml fresh oysters
25ml Korean radish (0.1 cm thick/2 cm length & width)
1 teaspoon sliced (diagonally) spring onion
1 teaspoon rice wine
150ml water
1/5 teaspoon canari aekjeot (sand lance sauce)
1 pinch minced (or sliced) garlic
1 pinch ground pepper

Directions

1. Place water, radish and garlic in a pot with water. Bring to a boil for about 3 minutes over high heat.

2. Add oyster, rice wine, fish sauce and ground pepper. Cook for about 1 minute and turn off the heat.

3. Serve in a bowl and sprinkle slices of spring onion over the soup.
